I'm making these cookies this evening but they don't seen to come together as a batter, however much and vigourously I stir. The amount of liquid seems very low. Should I use my hands and force this into a cookie dough ball?

Dear Anna,

I love your newsletter so much - and when this last Friday’s edition dropped in my inbox, I was very happy to see that it featured your rhubarb and white choc biscuits - which I discovered a few years ago (feel like it was in lockdown…?) and which everyone in our family LOVES. So I make them a lot when my rhubarb is growing which is all the time - god it never stops - from now till winter. Anyway, I name checked your recipe in my food column in Word of Interiors mag last month - April issue. (Not sure I can send a photo of the mention in this box, but trying below..)

I was one of the lucky people who did pick up on your original recipe and I’ve been making these cookies in rhubarb season ever since. Such a delicious combination of flavours and who doesn’t love a cookie. Thanks Anna
