One thing I wanted to dare to ask - this list feels quite short on protein. I do see beans, the egg and some dairy, but they don’t ‘feel’ emphasized. I know that even in early middle age and beyond (i.e. both peri and post menopause), protein is critical for women, and upping daily intake to 100g per day is being recommended by some menopause-conscious health experts. This is so daunting as a plant forward eater. It would be lovely if you were to share any thoughts on this? Am only recently trying to figure this out and need inspiration of the sort that only Anna Jones can give! But understandable if the topic is not your cup of tea ;)
Interesting. I often feel there is too much focus on protein and I cover that in detail my 4th book ‘one’. This loose recipe is intended for one meal and breakfast and lunch could have more of you wanted. If you wanted to up the protein here you could add more eggs or beans or yoghurt/soy yoghurt as suits your needs.
